Improvised Chocolate Mousse

I wanted something sweet and rich for dessert, but nothing in the freezer, but I did have a 1/3 of a can of coconut cream in the refrigerator. I folded in 2 Tbsp of raw cacao powder and a teaspoon of honey. Instant non-dairy, paleo dark chocolate mouse - rich, bittersweet… Just the way I like it. Done and down in 5 minutes. Most important, it hit the spot!

Loosely based on a recipe I found on Mark’s Daily Apple.

Next time I’ll add a pinch of salt, a 1/4 teaspoon of vanilla extract and some of those frozen berries in the freezer.
